Tony has been making Focaccia for months.
It's so beautiful and delicious, I had to post it here!
He starts with 4 cups of flour in a large bowl.
He adds 2 tsp of salt.
In a measuring cup, put 2 tsp of yeast into 2 cups of warm water. Let it sit for a few minutes to bloom the yeast.
Pour the water into the flour mixture and mix with a spatula until it forms a wet ball. Add flour if needed.
Add some olive oil, a "nice amount."
Put the dough into a bowl with a lid, and into the refrigerator. Let it rest overnight, up to 2 days.
After that time in the refrigerator, your dough will look like this!
Cool on a rack. Store slices in the refrigerator or freezer. Heat in an air fryer or toaster.
