Tony's Focaccia Bread

 Tony has been making Focaccia for months.

It's so beautiful and delicious, I had to post it here!

He starts with 4 cups of flour in a large bowl.

He adds 2 tsp of salt.


In a measuring cup,  put 2 tsp of yeast into 2 cups of warm water. Let it sit for a few minutes to bloom the yeast.






Pour the water into the flour mixture and mix with a spatula until it forms a wet ball.  Add flour if needed.






Add some olive oil, a "nice amount."



Put the dough into a bowl with a lid, and into the refrigerator.  Let it rest overnight, up to 2 days.


After that time in the refrigerator, your dough will look like this!



Oil a good baking sheet with edges.


Add more oil to the dough and mix by hand.



Add more olive oil and let it sit in a warm place uncovered,



...until it looks like this!


Poke the dough with your fingers all over.


Brush with more olive oil and sprinkle with fine sea salt.



Put in a pre-heated 425 degree oven for 20-25 minutes, until golden brown.


Cool on a rack.  Store slices in the refrigerator or freezer.  Heat in an air fryer or toaster.
You can add rosemary and roasted garlic to the dough for add interest.
